Blueberry Chia Seed Pudding
Chia seeds might just be one of the easiest things to add to your diet because they are so versatile and don’t have much of a taste. You can throw them in a salad, a smoothie, protein bowl, soup, or add it to the mix of nuts and seeds in your homemade grain free granola, one of my personal favorites. These tiny little seeds are packed with nutrients and have a number of health benefits ranging from heart health to skin health.
Chia seeds are high in Omega 3 Fatty Acids, which alone are incredibly important for your health. They improve heart health by lowering triglycerides and increasing HDL, which is the good cholesterol. They improve skin health by decreasing inflammation and improving your skin barrier, keeping moisture in and irritants out, just to name a couple of things.
Chia seeds are also high in fiber, aiding in digestion and with fiber taking longer for our bodies to digest, keeping us fuller longer and leading to better weight management.
This Chia Seed pudding is the quickest breakfast or snack and perfect to take on the go. It’s become one of my go-to’s.
Ingredients for 1 Serving
¼ Cup Chia Seeds
½ Cup Nut Milk of Choice (I love the Malk brand)
1-2 Tbs Almond Butter
1 Tsp Honey
¼ Cup Blueberries
Pinch of Cinnamon
Nuts/Seeds to top
Mix together chia seeds and nut milk, cover, and place in the fridge for a minimum of 2 hours (or up to a few days!)
When ready to eat, give chia seeds a good mix, top with almond butter, honey, berries, and nuts/seeds if desired.
