Grain Free Granola
This grain free granola recipe has quickly become a household staple in the Falk home. It takes minimal prep, it’s healthy, and super versatile! I add it to yogurt for a hearty breakfast, top smoothies for an afternoon, treat, or throw it on a salad for an extra crunch. And it’s good enough that my husband eats it for dessert! I’ve listed below the recipe that I tend to follow, but know that you can use any nuts or seeds that you like or that fit your dietary needs. During the holidays, I love to add some nutmeg and cloves for an extra flair (and it makes the house smell amazing. The bottom line, it’s hard to mess this one up.
1-2 C Chopped Pecans
1-2 C Chopped Walnuts
1-2 Chopped Almonds
1-2 C Pumpkin Seeds
½ C Flax Seed
3 T Grass Fed Butter or Coconut Oil
¼ Maple Syrup
2 T Cinnamon
Flakey Sea Salt to taste
Combine all dry ingredients (excluding cinnamon or other spices) in a large bowl and mix. Melt butter/coconut oil in a separate dish and warm maple syrup/honey before adding cinnamon. Combine wet and dry ingredients and spread on parchment lined baking sheet. Bake on 250° for about 45 minutes, mix, and then bake another 30-45 minutes. It will look and feel sticky when it first comes out of the oven, but once it cools it should be nice and crispy. Top with flakey sea salt while the mixture is still sticky.
