Greek Inspired Kabobs, Salad, and Lemon Yogurt Sauce

I’ve been making this recipe since my husband and I met and it’s still in our weekly rotation. A staple, if you will. AND it makes great leftovers for lunches throughout the week, it’s the whole package. 

A couple of things to note: If you can, marinate the chicken (or steak, we usually do both) a few hours ahead of time and set aside in the fridge. I prefer these on a grill, but you could always cook the meat in a cast iron without the skewers if you don’t have a grill available. 


For the Meat

-3 Large Chicken Breast

-[size] Tri Tip Steak

-Juice of 1 Lemon 

-⅓ Cup Extra Virgin Olive Oil 

-Italian Seasoning to taste

-Salt and Pepper to taste

For the Salad

-2 Cups Cucumbers, peeled and diced

-2 Cups Cherry Tomatoes, cut in half or quartered

-½ Cup Kalamata Olives, pitted and sliced

-Dried Oregano to taste

-¼ Cup Extra Virgin Olive Oil 

-Juice of ½ Lemon

-¼ Cup Juice from Kalamata Olives 

-Feta Cheese to top

-Arugula (optional) 

For the Sauce  

-1 Cup Plain Greek Yogurt (or plain coconut yogurt for dairy free)

-Juice of ½ Lemon

-1 Tbs Minced Garlic

-¼ Cup Fresh Dill, chopped

Method: 

  1. Start by prepping the meat. Ideally, this is a few hours before you are ready to cook your meal. Cut chicken and steak into 1-2 inch cubes, place in a large bowl, and add lemon juice, olive oil, Italian seasoning, and salt and pepper. Coat evenly, and then cover and place in the fridge. 

  2. When you are ready to cook your meal, place meat on kabob skewers and grill on medium heat until internal temperature has reached 165 degrees. 

  3. For the salad, throw diced cucumber, cherry tomatoes, and kalamata olives in a large salad bowl. Top with dried oregano and toss with olive oil, lemon juice, and juice from the kalamata olives. 

  4. For the sauce, add yogurt, lemon juice, garlic, and fresh dill to a bowl and mix well. You can adjust garlic and herbs to taste if desired. 

  5. To serve, add arugula to a plate (if desired) and top with salad mixture and feta cheese. Add chicken or steak and yogurt sauce on the side.
