Pesto Avocado Toast with Eggs

This recipe is one of my favorite spins on the tried and true avocado toast. It’s a quick, savory, and well balanced breakfast (or lunch), and keeps you full for hours thanks to some healthy fats, protein, and fiber.

Sourdough Bread
Pesto 
1/2 Avocado 
Sliced Tomato
2 Pasture Raised Eggs, over easy 
Microgreens
Salt, Pepper, and Red Chili Flakes to Taste

To assemble, toast sourdough and add pesto, avocado, and sliced tomato. Cook eggs to your liking, for this recipe I like over easy or pan fried with a runny yolk, and then top with microgreens, salt, pepper, and red chili flakes. The whole process takes about 5 minutes!
