Roasted Carrots with Whipped Feta

I made these carrots on for a Christmas side dish but I immediately knew I’d be making them year round! They are so easy and so delicious. Just add a quick protein and it’s the perfect meal.

8-10 Large Carrots

Olive Oil for roasting 

Dried Rosemary to taste

Dried Oregano to taste

Salt and Pepper to taste

16 oz Feta Cheese

Juice of 1/4 Lemon

2 Tbs Honey - or more if you like it sweeter! 

Fresh Parsley, chopped

Pine Nuts

  1. Preheat oven to 400.

  2. Cut carrots in half, long ways and toss with olive oil, rosemary, oregano, salt, and pepper.

  3. Place carrots on a parchment lined baking sheet and bake for about 30 minutes, or until slightly crispy. 

  4. While carrots are roasting, add feta, lemon juice, and honey to a food processor and whip for about 2 minutes. 

5. Add whipped feta to a plate, then add carrots and top with chopped parsley and pine nuts.
